Chicken and asparagus stir fry

In my wise old age, I have come to a realization about myself — I am terrible with due dates. I at least mailed in this week at 4:50pm! I have a pretty terrible track record of remembering to take care of chicken and asparagus stir fry on time. I realized the same holds true there. Let’s just say that I think I finally learned what happens to cilantro if it accidentally gets hidden at the back of the vegetable drawer for a month!

The good news was that, as I was taking an inventory of leftover ingredients in the fridge, I realized that I had the makings of a stir fry right in front of me. So I decided to make a simple chicken and asparagus stir fry for lunch, mixed with some garlic, scallions, soy sauce and honey. It took all of 15 minutes to make, and after I took the first tasty bite, I realized that I should totally share it with you! So I mustered up every inch of self-control to resist diving in, and instead set up my camera and snapped some photos for the blog. Oh the life of a food blogger — lots of lukewarm food after photo shoots!

But even then, this simple stir fry absolutely hit the spot. So simple, but such great flavors. Plus, it’s healthy and literally comes together in a snap. Description A quick and easy chicken and asparagus stir-fry. Add chicken, and stir to coat. Set in the refrigerator until ready. Meanwhile, heat oil in a large skillet over medium-high heat. Add asparagus, and saute until cooked, about 5 minutes.

Remove the asparagus with a slotted spoon, and set aside. Remove chicken from marinade, and add to skillet. Then add garlic, scallions, and the reserved marinade to the pan. Saute for an additional 2 minutes until the chicken is cooked and the garlic is fragrant. Remove from heat and stir in the cooked asparagus and sesame oil until combined. Serve immediately with rice, garnished with toasted sesame seeds if desired.

I marinaded the chicken in the soy sauce, honey, sesame oil, and garlic for a few hours before sautéing and it was delicious! I made this tonight and it was very good. Next time I will make 3-4 times as much marinade. There was none left in the bowl when I took the chicken out, and more would have been nice for the rice. I like my stir fry saucier, though it was still very tasty. Thanks Crystal, I’m glad you enjoyed it! Yum, I bet it was gorgeous with that purple broccoli!

Sounds lovely with the jasmine tea too. Wow, so darn simple and full of flavor. Plus clean up is as easy as can be. Add put a little sraracha sauce on the side for s heat. I just made this dish last night. I added onions and green peppers, too. I will certainly make it again! Mine was all kinds of soy sauce brown.

Then cooked until tender. Thanks for sharing, i agree that it could be mellowed out a little. Use low sodium tamari instead of soy sauce for gluten, i recently found this recipe and did not have any asparagus so I used broccoli. And this recipe showcased them beautifully! We have tried most of your dishes, didn’t have corn starch so I used flour and made a rue.

It was delicious and super easy, however the recipe asks you to set aside the asparagus after cooking it and doesn’t ever tell you to do anything else with it. I think I added it back too soon because it became very soggy. It didn’t really ruin anything except I love the slight crunch that comes with stir fry. Whoops — so sorry about that! Yes, you just add it back in at the very end with the sesame oil. Very good and very simple to make.

Turned out beautifully, used onions and asparagus, doubled the amount of sauce three in a few red pepper flakes, served with siriacha and wild rice.
